Often the elderly's age was exaggerated. The above censuses all indicate that William Winkler was indeed born in 1823, give or take a year. The following newspaper article was posted from Newspapers.com in an Ancestry tree, suggesting he was ten years older - an increase of 20 years since 1900.
Dated 17 Dec 1910
HE IS ACTIVE AT 98 YEARS
W. M. Winkler of 413 South Buckeye, Enjoys Life.
Retains All His faculties, Reads Much and Enjoys Fishing - Iola's Oldest Citizen.
Perhaps the busiest man in Iola is W. M. Winkler of 4113 South Buckeye. Mr. Winkler is 98 years of age, and is remarkably active and well preserved. He had now attained his so-called "second sight" and habitually reads without glasses. His hearing is as good as ever, and in fact better than than of many younger people. Neither is Mr. Winkler obliged to use false teeth, although several of his natural teeth are missing. Mr. Winkler's faculties are extremely well preserved, and he is a great "josher" and will even go so far as to wrestle and run races with anybody anywhere near his great age.
In the summer time he usually goes fishing at least once a week walking a distance of several miles unaided. His grandson, Will Hering, says that Mr. Winkler several times tired him out when they went walking together. One man who knows Mr. Wiinkler says that an incident he remembers particularly is seeing th eold man up in an apple tree knocking down the apples. Many competent judges, not knowing Mr. Winkler's age, have guessed it to be 75 years and under.

The Quincy Daily Herald, 7 Nov 1911
W. M. Winkler Passes Away At Iola, Kansas - Remains Brought Back
William C. Winkler, trimmer of the electric light company, received a dispatch at 3 o'clock yesterday afternoon, announcing the death at Iola, Kansas, of his grandfather, William M. Winkler. The dispatch came from his uncle Joel Winkler, of Canton, MO, and announced the death and the fact that the remains would be received at Canton this morning.
William M. Winkler was for many years up to ten years ago a resident of Canton, his vocation being that of fisherman. Eleven years ago his wife died and within a year he left Missouri for Kansas to take up his residence at Iola with his daughter, Mrs. Jacob Hering. It was at her some that the death occurred.
While not knowning his exact age William C. Winkler is under the impression that his grandfather must have been nearly 100 years old at his death.
Besides Joel Winkler and Mrs. Hering mentioned above, the deceased is survived by a son, George Winkler, residing near Alexandria, MO. Cyrus Winkler, of Quincy, for years employed by the gas and water companies, deceased, was a son of W. M. Winkler, and John, also deceased, of Warsaw was the fifth member of the family.
The Quincy grandson went up to Canton this morning to attend the funeral.

Unidentified Newspaper article:
IOLA'S OLDEST CITIZEN DEAD
William Winkler "99 Years Young" Was Active Until a Few Weeks Ago
Iola, Nov. 7 - William Winkler, aged ninety-nine years, died last night at 11 o'clock at the home of his daughter Mrs. J. Hering, 413 South Buckeye street, after being confined to his bed with illness for the past three weeks. The remains were shipped this afternoon to Canton, MO, his old home, for burial beside his wife.
On September 14th, last, Mr. Winkler was ninety-nine years old and up to three weeks ago he had been in the best of health, being remarkably preserved for his age. Many times even during the past year, he went fishing by himself, walking miles at a stretch. It seemed as if the burden of years suddenly crushed him , and since he was take ill, the end has been constantly expected. Mr. Winkler was born in Frankfort, KY, in 1812 and was doubtless the eldest person in Iola and probably in Aden County.
It was commonly said of Mr. Winkler that he was "ninety-nine years young."
Though not the older in point of residence, he was probably the eldest whie citizen in Allen County.
