Her name was written on the family papers as Catherine L., but I believe she later went by Lucy Catherine. I found her in the Appling family databases as Lucy Catherine Hadden, but her age in subsequent censuses, her birthplace, and the names given some of her children - particularly the first daughter, lead me to believe that I have found the lady.

She married Allen Monroe Appling, probably in one of the counties that - Camden, Pulaski, Wright - that were the parent counties of Laclede Co MO. Although since both were born in Kentucky, and may have been living in Simpson Co, they may have married before leaving. The marriage records for Simpson Co are lost. Since exact birth dates of the children are found, it's likely there was a Bible or family record of some sort. I would think they married two years or so before the birth of the first child in 1846. Allen was some years older and the databases show a second brief marriage to Karen Jean Cunning - it that marriage took place it was before he married Lucy, since she outlived him.
