Before we were married Art took me to meet his Aunt Ruth. She served us these
wonderful ginger snap cookies with coffee; I asked her for the recipe and it's
been a favorite of our family ever since.
Aunt Ruth's Ginger Snap Cookies
2/3 c. melted lard or shortening
1 c. sugar
1 unbeaten egg
1/4 c. molasses
2 c. flour
1/2 tsp. salt
2 tsp. soda
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
Mix lard and sugar, add egg, beat until fluffy. Stir in molasses.
Add dry ingredients. Mix well. Roll dough into balls. Dip tops in
sugar. Place on cookie sheet, bake 10 minutes at 350 degrees.
Gilbert told us that his mother had a sister, Esther, who married Ervin
Robinson, and two brothers, Hugo Lind and Reuben Lind. He also recalled his
grandfather Lind as a man with a beard who would suck his coffee through the
beard, and that he always had a little whiskey in his morning coffee.
